Truly. Nettles are the most amazing powerhouses of nutrition which makes up for them being such ghastly nasty plants in the garden. I am planning to cultivate an area of stinging nettles to try and try for my own tea. We had our dinner the night before with all the veggies harvested from the garden and it was delicious. We ate lunch at my mums but despite my dad being a gluten intolerant diabetic who needs to lose a "few" kilos the food was full of sugar and gluten and there was a gluttons worth of it. We moved all the snacks out of reach of Orik and the others were told "NO!" in no uncertain terms and told why. They were brilliant. When it came to plum pud I'd made up and bought with me our rapadura sweetened custard as requested to find mum had bought commercial stuff anyway *eye roll* so that came home with us. Mum also traditionally makes ice cream plum pudd with all the Christmas pudding fruits and spices mixed into a melted tub of ice cream and re-frozen. It's divinely delicious but choc full of sugar and other preservatives and stuff so I made my own. I made a coconut cream icecream and then mixed in all the fruits and spices (organic when I could) and froze it up. I have to say it was delicious and probab;y even a little better than Mums. :) Next time I made the ice cream I subsed the rapadura for date paste and made it healthier and less sickly sweet yet again. It isn't something we can make at home whereas we can render our own lard and whip cream from our cows to make our own butter but that's just the small money. the big money lies in their main business. Making drugs. My dad is supposed to be GF and is a diabetic but with my family being gf and processed sugar free it's "too hard to cater for" us. WTF? :(<br />You know you are always welcome here and although we are on a different journey through the valley of foods I will NEVER be offended if you say no to things I've cooked or you bring your own. :)<br />Thankfully many of my friends are just as "weird" as me with food and I hear you on behavioural improvements too. My kids have responded amazingly to removing gluten from our diet and we clearly saw the reaction to the gluten in oats so its gluten free oats all the way now. My mum made them chewy, Beth crunchy and both swore theirs were the best. I must admit in most things cooking wise, particularly these days being GF (including oats) and refined sugar free although not fructose free, my mum and I disagree totally but I would still go a chewy Anzac over a crunchy if a choice was available. I wonder if it is the glden syrup that makes them chewy or simply bake time. Coconut oil is our main go to although the flavour can be a bit much at times. Otherwise we use olive oil (no go over a certain temperature but the Thermomix reaches about 110C which is under the danger threshold. When it comes to roasting spuds and the like I have 2 favourites though, duck fat and lard. Yes, both are considered "bad fats" by the modern media but they're far healthier than those nasty GMO oils that are hydrogenated to prevent their rapid rancid status.
